Asian-style pork + green peppercorns recipe SERVES 4

 Spice things up in winter with this delicious dish of Asian inspiration.

400g pork neck steak, cut into chunky pieces

3 tbsp green curry paste

2 tbsp olive oil

3 green chillies, deseeded and chopped

400g green beans, trimmed and halved

125ml coconut milk

1½ tbsp fish sauce

1 tsp brown sugar

2 tbsp Madagascan green peppercorns

basil leaves, to garnish

steamed rice, to serve with

Toss the pork chunks in the curry paste, then heat 1 tbsp of oil in a frying pan and fry for 2 minutes before setting aside. Return the pan to the heat, add the remaining olive oil and fry the chilli and green beans for 2 minutes.

Add the coconut milk, fish sauce, brown sugar and peppercorns, stirring till well mixed. Add the pork to the pan and cook for a further 1 to 2 minutes or till heated through. Serve with steamed rice and garnish with basil leaves.
