MAKES 32 BISCUITS

These are great pre-dinner snacks and could also make awesome gifts.

187g salted butter
375g cake flour
½ cup of parmesan cheese, grated
4 tsp thyme, finely chopped
tsp black pepper, freshly ground

Pre-heat the oven to 170ºC. Place the butter, flour, parmesan, thyme and black pepper in a food processor and process to a smooth dough. Roll the dough into a sausage shape and wrap tightly in cling film. Allow to rest in the fridge for two hours. Remove from the fridge and slice into ½ centimetre-thick disks. Grease the baking tray and bake for 15 - 20 minutes or until the base is golden brown. Cool on a wire rack and serve with quince paste or delicious cherry and aniseed preserve.

We recommend Creation Syrah Grenache

A red from near Hermanus, exotic and full of flavour. The Grenache really picks up the spice and fruit flavours and makes it great with spicy food.
