cup of parmesan cheese, grated

tsp thyme, finely chopped

tsp black pepper, freshly ground
Pre-heat the oven to 170ºC. Place the butter, flour, parmesan, thyme and black pepper in a food processor and process to a smooth dough. Roll the dough into a sausage shape and wrap tightly in cling film. Allow to rest in the fridge for two hours. Remove from the fridge and slice into ½ centimetre-thick disks. Grease the baking tray and bake for 15 - 20 minutes or until the base is golden brown. Cool on a wire rack and serve with quince paste or delicious cherry and aniseed preserve.
