 10. Bacon, mushroom, onion and cheese
This is always a fool proof combination of flavours. The best part is any cheese works! Fold the pancakes into little triangles for a delicious savoury pancake.

9. Crepes topped with candied nuts and honey
To make your candied nuts, caramelize some sugar in a hot pan, then toss a mix of nuts in and allow the caramel to coat them. Throw these over your crepes and drizzle with honey. Just to be extra devilish, add some whipped cream; why not!

8. Mozarella, red onion and chorizo sausage
How can you go wrong with gooey mozzarella, squashy cooked red onions and spicy chorizo sausage? It`s like a delicious Italian Panini except its wrapped in a light, fluffy pancake.

7. Salmon, dill and crème fraiche
It`s such a classic combination of ingredients. Smother the pancake with crème fraiche, layer it with smoked salmon and then sprinkle chopped dill on top. It`s a rolled up salmon blini. Fabulous!

A filling which may have been described as “life changing” in more cases than one. Need I say more?

4. Black Cherries, cream and dark chocolate
If you can get your hands on some fresh cherries you are in luck. Stew them so that they whirl around in their decadently dark sauce. Otherwise use tinned black cherries. Dollop some freshly whipped cream on the pancakes and shave dark chocolate on top. This always works as a very impressive dessert.

3. Milles Crepes
This is a French dish, as the name suggests, meaning “thousands of pancakes”. That`s a great start in my opinion! It`s traditionally made by layering pancakes with pastry cream in the middle and then slicing it like a torte to serve. You could use any filling really. I do recommend putting some raspberries or any berries into the mix to add a bit freshness.

Yum yum yum! A fragrant, zesty, nutty bundle of happiness. TLC (www.tlc.com) has a delicious recipe for this pancake filling. It`s well worth a try and accompanies a cup of Earl Gray tea beautifully.

Now this is an age old tradition in terms of pancake fillings but it`s definitely for a reason. Sunday morning markets wouldn`t be the same without the smell of cinnamon and sugar pancakes wafting through the crowd. In my opinion this is a classic and it`s damned hard to beat!
